Campbell’s passion to surf and travel is what led him to forge a career within the culinary realm. After completing his apprenticeship in Australia, Campbell’s wanderlust saw him take residency at some of the worlds most esteemed restaurants, including Michelin Starred restaurant, Noma in Copenhagen. Campbell’s culinary philosophy focuses on creating meals that celebrate the flavours and simplicity of fresh, sustainable produce. Campbell collaboratively works with local growers, small-scale fishermen and Kokomo’s on-island farmer, to continue to elevate the benchmark of Fijian dining.
